Eggs Winchester by Yvonne Sinclair
This recipe was inspired by the eggs served at the Winchester Inn in Ashland Oregon. Probably not exactly like Winchester Inn Eggs, but wonderful also. I named mine “Winchester Eggs” in honor of the Inn and one of my favorite places to visit.
Serves two;
Artichoke bottoms- four. Warm with completed spinach.
At least -½ pound Spinach, Sautee with olive oil and 3 cloves garlic (add sundried tomatoes for a different taste).
Four poached eggs done to taste.
Béarnaise Sauce.
Here is where there is a choice. I used to make my own Béarnaise sauce with fresh herbs, fresh eggs, and butter. Now I use Knorr Béarnaise sauce mix. My taste has changed and the “made from scratch” sauce seems extremely rich. The Knorr mix can be made with soy or almond milk. It has Wheat Starch and Whey protein, so if you are on a strict no wheat no dairy this will not work for you. If your diet allows this will be close to wheat/gluten free and dairy free.
Really easy to make. I use a poaching pan for the eggs and make the sauce in a heavy sauce pan while the spinach and artichoke bottoms finish.
Cut the artichoke bottoms in fourths so they will lay a little more flat and cover them with sautéed spinach. Top this with the poached eggs and then a long slice of sauce. Serve with additional sauce available.
A little fruit on the side makes this a really wonderful wakeup meal.
