Luscious Lasagna-(wheat free, dairy free) Nutritious and Scrumptious

Luscious Lasagna

Ingredients will be listed in sections for layering.

*What would be the Ricotta Cheese layer:

½ pound Tomatillos husked washed and chopped

1 cup fresh washed and chopped Cilantro

2 cloves garlic chopped or crushed

1 4 oz. can chopped chilies

1 – 14 oz. Tofu (firm)

2 Tablespoons lime juice

Place all ingredients except the tofu in a food processor and blend well. Add the tofu and blend well again.

*One box brown rice lasagna noodles. Cook until tender

*2 – 9 oz. containers baby spinach. Sautee until tender in a little olive oil and 2 cloves garlic minced.

*Sauce:

1 pound lean hamburger or ground turkey

1 onion chopped fine

¼ cup minced sun dried tomatoes

4 cloves garlic minced

1 teaspoon powdered oregano

4 teaspoons fresh oregano minced

1 Tablespoon Wildtree Leslies Chili Blend

2 teaspoons cumin

1Tablespoon fresh parsley minced

1 – 29 oz can diced tomatoes

1 – 29 oz can tomato sauce

Sautee hamburger or turkey in slight olive oil. When browned well, add onion and garlic and simmer until onion is soft. Add sundried tomatoes and all seasonings. Mix well and when well heated add diced tomatoes and tomato sauce. Simmer for about 30 minutes.

Sometimes I add a little red wine to my red sauce.

*Cheese Layer:

1 – 12 oz package Kaas Soy Cheese grated

6 fresh eggs and mixed well with the grated cheese

Hold some cheese for the top, or grate additional cheese.

Layering:

Grease a 9X13 Lasagna pan

Place one layer of noodles at the bottom.

Cover with a layer of red sauce.

Place the cheese/egg mixture next.

Add the “ricotta” mixture and then another layer of noodles.

Sautéed spinach makes the next layer.

Top with red sauce and finish with grated cheese.

Bake 350 degrees for 45 minutes.
